                I bought a Santa Maria attachment for my Weber Kettle. It looks cool but I have not been impressed with how it cooks. The tri-tips (Santa Maria's iconic cut of beef) that I have done have come out drier than I would like. That is a risk with direct heat cooking.

                I have experimented with keeping the meat higher above the heat. That has helped, but I can get a moister and more evenly done, medium rare, tri-tip using a two zone approach in my kettle with the lid on.

                I have had success grilling half chickens on the Santa Maria setup. I split the chicken in half and bake it about halfway done in the oven. I put it on a rack with a pan below to catch the fat drippings. I then finish on the grill. Getting the excess fat out prevents flame ups on the grill. You can get nice color on the chickens on the grill.

                  Johhny, I was in Argentina a few years ago and saw several homemade style Asado grills using cinder blocks. Argentina produces a lot of beef, and it seemed like they eat beef about 7 days a week. They use a lot interesting savory spices and a variety of methods to cook their beef over an open fire. Post pictures of your creation.

                  "drinking and cooking" are my favorite two things to do! I built a whole outdoor kitchen just for that. Seven cookers, hot water sink, dishwasher, refrigerator, wall mount bottle opener, a warming drawer and some comfortable chairs.
