Have any PKers simulated a Vortex like cook with a pile of hot coals in the middle of the grill with wings, lamb chops, etc.. all around?? I''ve only set lit coals on right side of grate and either cooked direct "hot n fast", or two zone indirect. Anyone?

I have! I love that Vortex on my PK360. It will sit under the cooking grate but it's just a smidge too tall, but not enough to keep me from cooking with a somewhat wobbly cooking grate. The lid still closes.
Chicken is placed around the outside (mostly on the left and right) and when that dome closes, it really gives crispy chicken!
I also use the vortex on top of the cooking grate, and use the little removable side grate over the top of the vortex to get really good sears on steaks, chops, fruit, etc.

(I mis-answered your question. I have a Vortex, so I wouldn't try to simulate it without the structure. Sorry about that.)
