I feel like I am running a solid setup here. Bottom right vent is open and top left is open. Lump charcoal stacked to the side. Burn times are fairly variable between 4-8 hours mainly because I am running some very poor quality briquettes through it, but the lump does much better. Temperature is just rock solid at 250 or 275 depending on what I want.
I think you got it pretty well covered, since your temps are solid and your happy. I arrange my set up a bit differently when I use my PK360 (works the same on my PK Original) for smoking meat.
I use a wood split as a fence. Keeps the coals tight and in order and also adds a little smoke since the wood burns a bit.
I use the Minion method. I use a soup can that is opened on both ends. Put the can wherever you want and then fill around the can with unlit coals and some wood chunks. Light some coals in a chimney and then pour them into the can. Then carefully remove the can and the lit coals stay behind. I get a long cook (10 hrs) from this method and my temps are around 250d.
Sorry, I thought I had a picture of this set up, but only found the set up with the wood split fence, but I think with the description above you get the picture.
Also, I used lump once in my PK360 and the heat from the lump warped my vent cover. I thought that was interesting.
