Hi all, maybe they are too new, I haven’t seen anything mentioned here about the new griddle for the PK360.I typically flip a couple of my grill grates over to the flat side, but this looks really cool!

I think you might put a small foil pan under the cutouts? Let that side be your cooler zone.
That said, if you do burgers or such on the regular grates, the grease drips through onto the coals. I find griddling food unless it's bacon, I don't get a ton of excess grease. Burgers are probably the greasiest thing I cook on the griddle, and you cook those on regular grates over charcoal too...
Looks like the griddle would make a good heat deflector for smoking ribs. Just use a couple little more grids on top of the griddle and you cook 2 or 3 racks of ribs
