    Keeping MCS at bay

    Hello Pitters
    Opinions welcome:
    Have had Weber gas for years, then wife bought Weber 22 kettle a few years ago for some reason that never happened. I got interested in the kettle as I love all cooking/kitchen tech after Kenji of Serious Eats recommended this site and I have had great fun learning from all of you and eating the results. Last year acquired grillgrates for the gas and kettle, SNS, Fireboard 1, Vortex clone. Love the them all
    This year so far got Rotisserie for the gas which has worked great and is used weekly and put a gasket on the Weber.
    I know I don't need anything and the deck is getting crowded but...
    Oklahoma Joe Bronco might have been here already if weren't so heavy to get on and off deck so have considered PBC. Would love to try hanging birds and ribs. Maybe I'll get 2nd prize some month.
    My sons neighbor got a Traeger and seems so easy to use (from what I hear- can't travel to see it).
    I know I would love WSCG (who wouldn't).
    So (Doctor) I think my solution to this "problem" is to further trick out the Kettle with blower. Minimal cost and space, got the Fireboard already. I know this is only a temporary fix but it may work for a bit. (Lets me do longer slow cooks and less time adjusting vents as the weather gets colder here in New England.)
    Can you help me?

    By the way as best as I can from spending time on guitar forums over the years:
    MCS=GAS with better W.A.F.

      Turn your Vortex upside down, spread charcoal two deep around it, put a drip pan in the center, spread some wood chips on the charcoal, and start the charcoal burning with ten lit coals. Adjust your vents, and now you are cooking low and slow.

        Was going to get a 10 cfm blower but would a larger blower get the kettle hotter for pizza?

          I don't use a fan for pizza - I use small splits and let them burn - not smoke. That will get you well above 700°.

        Thanks, didn't know you could do that in the kettle
