Once when I was in Japan I was taken to a Yakitori restaurant. It was huge and so was the menu. At least 50 different types of Yakitori, so not just chicken.

True, but I believe "yakitori" literally means "grilled chicken" in Japanese. But the art of yakitori is obviously more broad than just that.

11 years in Japan. Yakitori was almost a weekly occurrence. I have my favorites but was always willing to try the off the wall varieties.

Attjack what happened - did Son of Hibachi die or something? Or do you still have him too?

I still have him. He is my son. But I have a sickness known as MCS.

It did great on its maiden voyage. I lit about 3/4 of a chimney and dumped it into the trough Nothing to complain about yet. I like the dimensions of the cooking grate.

OK, so that looks really good..

That really does look like a lot of fun to cook on. I love my Weber Kettle, but the circular shape when doing kabobs/yakatori just drives me a little batty.

I form a trough in the kettle with foil wrapped bricks and that works well.

Nice job! I'd say you got more than your money's worth from that grill!

Firebricks will be the way to go for this mere mortal who didn't purchase a $20 Yakitori grill. Thanks for letting us take a peek at your setup Old Glory .

Michael_in_TX , with regular bricks you can have one of three scenarios: nothing will happen, they will crack, they will explode if the water content is too high.

My understanding is that bricks are fired at very high heat so you shouldn't have issues with exploding bricks. I never have. Cement "bricks" might crack though.

I've used regular bricks many times, they will last anything from 5-100 cooks. If you have them lying around, use them to get started. And then upgrade to firebricks if you like the cooking method and plan to do it more often.

Well, alrighty then. looks delicious and no grate to clean up. Win-win. Thanks for the photo.

It looks as though you evenly distribute the coals along the length of your grill, Attjack . No "cool" zone needed, then? Is your chicken cooked through to the center with this setup? I'm assuming so, but am thinking I'd have to use smaller chunks of chicken to make that happen.

No cool zone was needed, and the chicken was undoubtedly cooked through. I just removed them as they became done. I think the key is not to make the stack too long so you don't have issues with the ends not getting done. If anything I could have pulled some of them sooner. The chicken is very close to the coals so the heat is pretty extreme.

Yeah, that's the way to roll. But I would remove the center part of the grate so there's less cleanup to do after the cook :-)

Call me a purist, but yakitori should be grilled over binchotan

        if you can/want afford it!

we did yakitori at my old job. The flavor profile was life changing! My neighbor across the street is a metal worker. I may commission a little something from him.

That's always good, time to put your neighbor to work :-)
Actually, that made me think: I think I have some left-over metal lying around from fabricating offsets. I should be able to knockout a copy-cat version of this reasonably priced yakitori. I'll visit my basement/shop tomorrow to see what can be done...
