Trust me, mine are. It's called "seasoned."

That is kinda how I do mine for hot and fast in the OKJ, but I pour the hot charcoal over the other charcoal. For low/slow, I fill with charcoal, use 3 of the tumble weed lighters on the edges placed opposite from each other with wood chunks on top. It can take an hour or so for the temp to come up, stabilize, and the bad smoke to clear.

And mine is also well seasoned.
