My name is Josh, not Joey (surprise), and I reside in Central Ohio. I have been grilling since I could drive, and smoking for around 15 years. Over the past couple of years I have gotten more into just cooking, and really enjoy sous vide and the flat top. I find myself experimenting with different foods and new ways of cooking as an outlet to work stress. I use every piece of equipment I own regularly, with the exception of the electric smoker. That only gets brought out on occasion to make jerky.
My favorite beverage is bourbon. I typically have at least 8-10 bottles open at any given time. While I have favorites, I enjoy sampling new and different varieties.
At my house a flattop is a necessity. But so is the kettle, the stick burner, the cabinet smoker, the gasser, the camp stove, the pizza oven, the fryer...If you find yourself not using an appliance, then sure, get rid of it. I haven't had that problem yet, so I just keep adding new ones.
I have a LSG 20x36 offset, LSG 20x36 pellet, a Weber Performer, a Weber Genesis gasser and 3 burner Blackstone. I may use two on any given day but it depends on what I have going, the weather and my mood. All have their place and the wife is good with that. In fact she was the one that told me last year to order both LSG's and with prices going up and shipping costs going up I am glad I did.

Everyone's suggesting a flat top, save yourself a few bucks and purchase Grill Grates for your PK Go grill or Weber Spirit Gasser. Now you have your flat top grill.
I agree with the addition of a flattop since you were asking what’s missing. 🤣 I love my flattop and cook breakfast on it all at once so it all comes off at same time. Many other things have been awesome on it. Burgers are almost always done on flattop as they’re that good. I have a pellet smoker, and gas grill. There’s many times I’ve smoked something then took it to the flattop for a nice sear afterwards.
Ok, I will say that there is no limit to how many cookers a person can have...I use all of mine and will continue to do so. Here's my breakdown...

If anyone’s been wanting a Bronco, now’s the time to buy. Walmart has them online for only $269….Reg. $449. And FREE 2 DAY SHIPPING. I’ve never seen them this cheap in a long time. I think I paid $300. for mine a year or so ago. I was following bkono ‘s current post and he mentioned he saw them there for that price.

Re-reading this thread and realized I said this exactly one week before buying the Bronco that was delivered today. Didn't realize how accurate a comment this was...
I once quoted this gal many moons ago. Don’t remember her name & just threw away the note that I had saved for about 2 or 3 years ago. She is a blacksmith, talkin about her many anvils. She was explaining that each one had specific use.& then finished by sayin "you wouldn’t want just one when ya can have many".
