That is a Dot with a probe. Interesting, Dots are very accurate but it reads about 10 degrees lower than my on grill ambient probes. All my temp devices are Thermowerks so I assume they are all accurate and the temp profile just inside the door is a little cooler than on the middle of the racks. Also, my top rack is 10+ degrees hotter than my bottom rack. Every cooker has it little less quirks. I have a lot of probes so I can check out the differences. I don’t obsess over 10 degrees here or there but I do take out the meat on the top rack first.

Great post! KAT seems to be the closest fabricator to the Bay Area. Over the years, I have seen their ads on Craigs List for what look like extremely well made rigs but reviews about them have been few & far between. It’s good to read a positive first hand experience about them.
