Here is an update. The rib rings worked PERFECTLY! I was able to get (6) racks of St. Louis cut ribs on the top grate and (6) on the bottom. I trimmed them the night before and rubbed them with MMD. Then loaded each rib ring up, Wrapped their respective drip pans in foil and put them in the fridge overnight. The bark was the best I have ever turned out and I believe that is because the fluid that normally pools on top of each one when laid flat doesn't get that chance since they are turned up on the edges. Sorry for no pics (I was wore out). I cooked them for about 5.5 hours then was able to keep them on the rings and on the drip pans to transport them to work 10 minutes away. The only downside is the racks are a mother to clean when done. They would get an A+ if they came up with a non-stick version which will avoid me getting the stinkeye from my bride in the future. These are going to be really fun to use in the future on the 26" Weber kettle and the SnS when having company over for Sunday cooks.

I have a few sets of these:
Putting this here for posterity.

For the record I have used both types of the rib rack things noted above in posts #6 and #10. I did not find them very helpful, as the ribs were much taller than the racks and I found them flopping all over - if you set the ribs with the ring or holders in the middle, the ends were flopping everywhere, etc.
I really like these Ikea expandable things. I actually sometimes use 2 sets per cook - I have 4 sets total, they're so cheap, why not?
If I ever do another cook with more than 3 racks, I will try to take a pic. But with my Yoder I can do 5 racks laying flat, and I built a 2nd shelf for my Traeger and can do 4 or 5 on there flat, too, I think. I dunno, that one's been at my buddy's house the last couple summers.

Most I've done is either 10 or 12 racks, I forget it was a few years ago. Used the standard weber rib racks and moved them around a couple of times during the cook

Talk about timing. I have to cook about 12 baby back racks for a progressive Bloc party we’re hosting next weekend. I’m planning on splitting it up amongst my three cookers, which include the Grilla silverback, 18 WSM, and my new S&S kettle. I have 1 Weber rib rack I bought years ago and hardly use but it’ll be put to use next Saturday on the WSM.
