    Cowboy steaks .never cooked them

Going to do cowboy steaks on a pbc. Never cooked them before. Any helpful tips or suggestions on how to do them?

Never done steaks on the PBC myself. Here's PBC's recipe for tomahawk (aka cowboy steaks): https://pitbarrelcooker.com/blogs/food/tomahawk-rib-eye

What is a cowboy steak? I assumed this meant cooking directly on the coals, but maybe you are referring to something else. Kent Rollins did what he called Caveman Steaks (directly on coals). I don't see the button for inserting a hyperlink but here's the address if you want to check that out. https://www.youtube.com/watch?v=ImVV8sA7fFI

I like his recipes and would trust his advice.

Just trust the reverse sear and a temp probe. Done.

I love my PBC but I'm not a fan of using it for steaks because you can't get a 2 zone fire for the reverse sear or a front sear. If you have a kettle and can make a 2 zone fire you're better off. But you could bring them up to temp and then sear over a charcoal chimney.

Just think of it like a regular reverse sear. I like to take it to about 125-130 or so and then finish on my gasser over super high heat to get a good sear on it.
