    Cowboy steaks .never cooked them

    Going to do cowboy steaks on a pbc. Never cooked them before. Any helpful tips or suggestions on how to do them?

      What is a cowboy steak? I assumed this meant cooking directly on the coals, but maybe you are referring to something else. Kent Rollins did what he called Caveman Steaks (directly on coals).         Just trust the reverse sear and a temp probe. Done.

          I love my PBC but I'm not a fan of using it for steaks because you can't get a 2 zone fire for the reverse sear or a front sear. If you have a kettle and can make a 2 zone fire you're better off. But you could bring them up to temp and then sear over a charcoal chimney.

            Just think of it like a regular reverse sear. I like to take it to about 125-130 or so and then finish on my gasser over super high heat to get a good sear on it.
