This was the first time I didn't use hooks on the Pit Barrel. It was also the first time I cooked short ribs. They came out great but can never seem to get a good smoke ring when I use the Pit Barrel

The temperature stayed pretty much at 275 for the whole cook. It took about 4 hrs to cook them. The ribs varied in temperature though. Some were tender at 195 others I took to about 205.
