    Shorts ribs on Pit Barrel

    This was the first time I didn't use hooks on the Pit Barrel. It was also the first time I cooked short ribs. They came out great but can never seem to get a good smoke ring when I use the Pit Barrel

    Look really good, do you use any wood or just charcoal?

      I used apple wood because I ran out of hickory. Plus charcoal of course.

        Ricanbbq the ribs look good! I cooked some as well recently; what temperature was the PBC? and how long did it take to get to the finish? I used my pellet smoker...it ran at 230F and took about 7 1/2 hours to reach rib IT of 203F.

          The temperature stayed pretty much at 275 for the whole cook. It took about 4 hrs to cook them. The ribs varied in temperature though. Some were tender at 195 others I took to about 205.
