    Giant Mulefoot Ribs on PBC

    Now I want to start out by saying I am not from Texas and neither was the Mulefoot pig I am cooking today. I bought a bunch from farmer prepackaged. I thought this would be whole sparerib because of weight. Instead, inside are dinosaur bones. 8 inch ribs on this monster. Putting them on my PBC now. Very meaty, average 7 lb per rack. Cutting in half to got on PBC. Report back later, might wrap these monsters later. Check back later once they get smoked Click image for larger version

      Never cooked Mulefoot. Looked very meaty with substantial marbling. I am figuring at least 5 hours. They are quite thick. Welcome anyinput from others who have cooked Mulefoot before!

ID:	838186 Well we ate them up. Very moist..trying to fight food coma while typing. Taste was wonderful. I did take time to get some pics before devouring mucho pork.

                      This is one heritage breed of pig I've heard of and know nothing about. Those rib bones are very interesting. Meat looks marvelous !!

                            We buy our pork from a farmer who raises mulefoots. It's good stuff. Not quite Berkshire, but still awfully good.
