Now I want to start out by saying I am not from Texas and neither was the Mulefoot pig I am cooking today. I bought a bunch from farmer prepackaged. I thought this would be whole sparerib because of weight. Instead, inside are dinosaur bones. 8 inch ribs on this monster. Putting them on my PBC now. Very meaty, average 7 lb per rack. Cutting in half to got on PBC. Report back later, might wrap these monsters later. Check back later once they get smoked
