When you start using some of your smoked meat leftovers in nachos, meat marinara sauce, chili, etc. (as jfmorris suggests) you'll get the freezer inventory back under control, hubmacfan .

I agree with RonB , smoke some chicken and Italian sausage a la this post . Not many leftovers in a one chicken meal for 3, and any leftover sausage is great in marinara sauce or sausage rolls.
