hubmacfan I feel for you . we could eat barbecue every day of the week , nobody in our household would complain . When we were both working , the wife came home first , she would fire up the barbecue every day to cook supper during the summer . She`s the first one to say , we have to fill the freezer up for the summer .
If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
hubmacfan I can feel your pain. I can eat BBQ for 3 meals a day, every day of the week. My wife and the one daughter still at home, not so much. I end up using the Foodsaver to vacuum seal leftovers after a couple of days, and have random chicken halves, pulled pork, and other stuff in the deep freeze. I tend to pull stuff out and microwave it in the vacuum bags for lunches and stuff.
The other thing in my freezer is uncooked meat - currently a couple of chickens, 8-9 Boston butts, and a few slabs of baby backs. I always stock up when its on sale!
Sounds to me like you need to eat some of that piled up BBQ, and take a 2 week break on the PBC. Or smoke smaller quantities?
Another thought - get more creative, and mix it up. Cook up chicken or fish, versus more traditional BBQ. Make tacos/nachos with pulled pork/chicken/beef. Get creative to entice them to eat the left overs....
jfmorris I'll be taking a break. I've only had it for three weeks (as of yesterday) so it's still a new toy to me.
It doesn't help that we stocked up on shrimp, redfish, and red snapper at the beginning of April! I need to let the smoker rest a bit and grill some seafood.
My daughter always comments on how we eat pork all the time, but let's face it, not too expensive and modern pork is a great blank palette for sauces and seasonings.
My freezer has ended up with quite a collection of smoked stuff too. There's vacuum sealed and dated brisket, pork butt, and chicken every where I look in there. With just the wife and I here most of the time it adds up in a hurry. My best bet is to make the family get together on Memorial Day a leftovers buffet.

There's just 2 of us. My wife doesn't like leftovers more than once and our freezer started filling up quickly. I started cooking smaller amounts of food... 1 small loaf of bread, 1/2 lb meatloaves, 3 lb chuck roasts. It's not as efficient with the charcoal, but I get to smoke more often. And I figure if I can cook a small roast without drying it out, the big ones should be easy.
I have the opposite problem, a freezer full of uncooked meat.
If there's a good sale I stock up so I have lots of ammo for the smoker.
Never leftovers in this house.

This thread hits home for me. A Freezer, Several Cookers (Including a PBC this winter) and Foodsaver makes for a full freezer at all times. Our house also has only 2 people most of the time.
