    Tis a magical aroma! The other day I was doing some pastrami and some pulled beef with cherry and sassafras wood. When I was out on the deck doing some cleaning I caught a whiff of it and it stopped me in my tracks. Just incredible.

                    Hung 2 slabs last weekend and one tore and dropped. Think it was too done and will have to watch closer. Had to put on the gloves and reach down and pull out the two pieces. Anyone cut the slabs in half?

                    I have, but I found I rather like having the first rib or two be a bit more done than the rest, so I double-hang them all the time now (like how they do it in the videos on PBC's site).
