    Thanksgiving turkey in the PBC



    I bought the Pit Barrel for the trailer. As such, it was destined to live there over the winter. However, my wife and I decided that, since chicken in the PBC was so good, we would try the turkey in it.

    I went out t the trailer yesterday, brought it home, and cooked the Thanksgiving turkey in it today. I did the Noah Glanville technique (light coating of olive oil and PBC All Purpose rub) - the same way we do chickens. Turned out spectacular. Awesomely delicious turkey. We will be doing it this way again.

      Yup! If you look in the first picture, its lying on the tray with the turkey. Well worth the money.

              I always wanted to smoke a turkey and my neighbour let me do hers and it turned out very good, I followed Meathead’s method. My wife prefers turkey in the oven with stuffing. My neighbour plans to eat it today, I cooked it on Sat. It was about 8kg and it cooked in about 2 1/2 hours at 325F in the Akron egg, I used cherry wood for flavour. My wife was impressed with the finished bird so maybe I will get to do one for us next?

              YESSSS!!! Congrats on a great cook! I just got a PBC and my MAIN plan for it this fall is to make a turkey for Thanksgiving. Bought mine with the turkey hanger too. I'm hoping to be able to get a fresh one from the woods this fall, but if not, I'll settle for one from the store. But seeing your post gets me excited - thanks for sharing!

                  12 pound bird. I set the PBC up to run between 320 and 350. Got an initial burst of 420, then it settled down over the next 45 minutes right into the range I was shooting for. Hit 170 in the breast at 2.5 hours (watched it all the time with the Maverick). Pulled it and double wrapped it in a faux cambro for about 1.5 hours.

                  Tender, juicy, and delicious! My brother-in-law generally doesn't eat white meat because its dry. The two times I made chicken this summer and this turkey - he ate the white meat

                    Nope. If I'm doing poultry, I light with liquid and let it burn for 18 minutes instead of 12. Works every time.

                  Looks great, I have done a number of Turkeys in the PBC and the thing that always amazes me is how fast they cook. Hanging the bird above the coals with the open cavity really accelerates the cook compared to more traditional methods.
