GadjetGriller I actually had it in the PBC for eight hours... the ninth hour it was resting. However the coals were the original coals I lit in the morning. By the time I wrapped the brisket the PBC temp had fallen a bit. When I pull the brisket to wrap, I always stir the coals knocking off the ash and pile them up. This always gets me across the finish line. I don't recall ever adding coals but if I did I think I'd just light them in the chimney and dump them in once they ashed over... thanks for the kind words!
Thanks for all of the kind words everyone! The PBC makes good results fairly easy to accomplish... I highly recommend the PBC... to anyone sitting on the fence, just do it! :-)
