    Just another PBC Brisket

    I've had my PBC for a little over two years now... countless cooks later, I'm still impressed with this little drum smoker. Nothing fancy here... just a spg rub... wrapped it at about 180... done at 200... eight hours in the cooker plus a one hour rest. Pretty tasty stuff... :-)

                    Hondo I have only had my "Black Beauty" since September but once you are 'one' with your cooker, life is good. Super looking meat!

                      I agree... my only regret is that I didn't buy a PBC earlier. It was on my radar a year before I bought one...

                    Hondo I've only done 3 cooks in mine. ! turned out really well lol. Select Brisket was on sale last weekend for a buck 50 a pound. So I got a cheap 10 pound brisket to try in the PBC. My question was so far I've been able to get about 6 to 7 hours out of the original charcoal. you said it took 9 hours on your latest cook. Was that the original charcoal or did you start a new set? (my next question would be if you did start a new, how?) Great looking Cook that bark is wonderful!! I'm hoping that mine comes out half as good as your!!
