      Thanks for all the comments so far. Fear not. I will have pics and solicit seasoned feedback from all! This iteration of the device is really a speed prototype for proof of concept. Stability was the major issue going in but ideas about others have crept into my mind overnight so I am already considering enhancements. I'm hoping that these imagined and several issues with this specific setup prove insignificant to the completion of the task at hand today. (smoking lots of wings at one time) I'll report on how this works (or doesn't) later today. Once thing is certain... change is a comin'.

            If any of the wings are dropped in the removal process you need to take a drink. I think they play it in the kitchens of Wingstop.

              ok, the cook is over and as far as the end result of the wings tasting great, it was quite successful.

              However, trying to use the Skewer Hanging System was more problematic than I was hoping for. Certainly it allowed me to cook a ton of wings in a very small space. But the skewers were just too long to allow me to easily place each skewer on the rack while it was inside a hot barrel.
              I had to remove the grates and suspend them between a couple of outdoor tables to get away from the heat and easy access to all the hooks in the ladder.
              Ultimately, that worked fine though. I was able to pick up the whole system and place it in the PBC without incident. No lost wings or dropped skewers etc. The cook went just fine (see pics above for end result) and the wings were devoured.

              So the Skewer Hanging System as it was prototyped needs to go back to the drawing board for a bit of a re-think. I'll post the next iteration when it escapes my brain and gets onto the workbench.

                    Talk about necessity being the mother of invention! What a GREAT idea!! Can't wait to see where you go from here. Lots of really creative folks hanging around these parts!! I'd plop down $$ to buy something like this!

                      It's amazing that you didn't loose any wings. I lost two to the sink when I cut into the SV bag and then two off the high side of my Santa Maria as I was flipping them. Heck, I even bent the handle on one of my cheap spatulas! So I'm really impressed.

                          The cook for those wings was about 35 minutes. Lower vent open 50% and the Redneck Airflow Control open 100%.
