Geez, that looks almost like how I used to set up my Weber kettle... and I could count on getting at least six hours at 225-235F with that! My OCD is kicking in hard...
The ribs were just right, the brisket tender as could be! The fire continued all through the cook - I used the OCD layout with Kathryn's lighting sequence. Only negative: Folks at the potluck liked 'em so much, my wife and I didn't get a single slice or rib! So I'm smoking some beef short ribs today!
