Hey everyone, I am looking to purchase a PBC, but I have a couple questions for those of you that own currently. I smoke a lot of chicken wings, currently using a box gas smoker which has four wide racks for large quantities. The rub I put on the wings results in quite a bit of liquid dripping off wings during smoke. My questions are these: has anyone tried to "stack grates", hover grate style to increase capacity, and how does the PBC respond to a large amount of dripping juices? It does pretty well with juices. On 5 brisket cooks I will have grease pouring out the vent.....
I have stacked grates to cook brisket, which really just holds the top two to rotate to the bottom for getting bark.
I did stack with bricks to cook country style ribs aka sliced pork butt, and it worked out quite well.
