Wow, three new PBCs coming to newer members of the Pit! Like others have said, I would follow Noah's guidelines first, keeping it simple and RELAX! Don't over-think it. And don't do what I did and invite 12 people over for your first cook. Just have fun, put something (anything really) on there everyday for a few days and it will get easier every time. Give yourself time when you cook. Start early. Enjoy the experience. That thing is far more capable than most of us are. I've done all kinds of meat and veggies and never, not once, had a bad meal off it.

I'll post pics for sure.... I have a leg of lamb that was basically an Easter special freebie if you bought a big ham...My bride however, is a big fan of ribs... Ribs will likely win this one, but that leg of lamb will follow soon after... I'm corning a brisket now, and in a week or so, it's going on the PBC to be served with homemade sauerkraut (which if I may say, is the best I've ever tasted)!! It's all good, and finally temperatures here close to Ice Station Zebra (Michigan) will be spring like!!!
