Thank you all for the nice posts and comments. I have had dozens of cooks on my PBC since the mods and it still works great. There are pros and cons for all things. I love outdoor cooking, partly because I love messing with fire (the caveman thing that cgrover60 mentions above!). That said, the DigiQ DX2 has made me a lazier cook because it IS so consistent. I started off using my Maverick ET-732 as a back up so I could monitor how well the DigiQ was doing (and for not having to go outside to check the temperatures on the monitor). It works so well that I have quit using the Maverick as a back up. I just know it is going to work. This is great if you are cooking a large piece of meat while you are sleeping. Not so great if you enjoy messing with the fire by cracking the lid, stuffing foil in the rebar holes, adjusting the vent, etc. I have to admit, I kinda miss that sometimes. One word about the plant mover: it works great for what I bought it for - mobility. One other thing I have done is purchase some cinder blocks to raise up the charcoal basket to produce a great sear on my steaks (again, works great for this purpose!). The only thing is the weight of the cinder blocks has warped the shape of the dolly. If you do add the blocks, take the PBC and bottom stand off of the plant mover dolly first. Good luck PBC friends! Thanks Doc. I did not realize that. I have been using the cinder blocks to raise the charcoal basket to within 3" of the grill grate, then using my Chimney of Insanity and BBQ Dragon to get the coals jet-engine hot for the ultimate sear on my steaks. I didn't know how lucky I was. Won't be doing that anymore!
