I love cooking with wine. Sometimes I put it in my food.
One cannot have too many grills.
There are only so many hours in a day. Cooking can be hard without distractions. Why not use the tool that makes your day easier? The PBC sounds like the right tool for the job. My neighbor uses a Traeger pellet cooker and finishes off on a Weber 22.

Great choice! But you really need a kettle grill too you know. The stick burner is a premium smoker and the PBC is also a formidable smoker in its own right (and faster and less fussy), but what if you just want to throw some ribeye steaks over a fire and sear them up nicely? Gotta have that kettle! Or a gasser, but a kettle is more fun.
COVID was weird. At first I was grilling EVERYTHING because why not. It was not like I had to go in to the office, work from home mandates from upon high were a thing. I could grill and monitor the phone and emails and whatnot. Also activity slowed greatly, and not just for my division. The airport went from 100,000 or more people a day to LESS than 5,000! It was crazy and eerie. When I would go to the office, sometimes there would be NOBODY else in my visual range. Inside and airport terminal. Nobody at the gates. Nobody at the ticket counters. Like a damn zombie movie, only with electricity still on.
Anyhow beef prices went WAY up and supply was not consistent. Then pork and chicken and fish and everything else became inconsistent. Grilling activity slowed, even though available time increased. Spendable income also increased because one tank of gas lasted 2 months and there was no reason to use toll roads. And dry cleaning was absolutely not needed. It was a weird time.
Still is. I had steak for the first time since 2020 last Tuesday. I got invited to lunch at a Brazilian steakhouse. They bring skewers of assorted meats to your table and slice off what you want.
