I was planning on smoking a pork shoulder on the Yoder wichita yesterday, but staring at the stick burner resulted in dreading an hour and a half just to get the fire started and the beast up to temperature, which would be followed by a full day of reloading splits every 40 minutes, while juggling the demands of two toddlers who have learned to gang up on me all while dealing with general tiredness following covid from two weeks ago and a wife emotionally exhausted from said toddlers and illness . .. the thought of smoking was instilling dread rather than joy and instead I ended up doing instapot carnitas.
The clear solution was to get a PBC, you know, for the good of the family.

Purists would argue stick burners produce bbq that’s 10/10.
if some other method produces bbq that’s 8/10 but without all the hasssle and baby sitting, that’s is good enough for me when juggling other life responsibilities.
The ribs off the Yoder were the best ever, my wife isn't a huge bbq fan and loved them. But I only actually fired up the Yoder twice this summer (and I'm a teacher, so summer schedules are insanely flexible)

Been smoking a handful of years, just got serious in the last two or three years. Thanks to AR n @glemn picked up an SnS Kamado for appx 1/3 price of new. I dont think he used it twice. Love AR! keep calm n smoke on! Miss you Bonesy.
If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
The time and work involved in running an offset are why mine sits under a cover and is rarely used anymore. I find the results off my kettle+SNS or my kamado are so good and so hands off, I just struggle to make myself deal with the offset. I think the last time I used it was for the Thanksgiving turkeys a year or two ago, because its a short cook at 350, and I can manage that for the 3 hours or so a turkey takes.
Enjoy having BBQ again, and enjoy having a more hands off cook!
Who knows, maybe in a couple years I'll complete the full transition. Of course, while I'm pulling back from stickburning due to lack of available time, I'm also thinking about starting up a bbq club at the high school where I work. Thought processes aren't entirely rational, I guess
I have 2 stick burners, and a pellet grill - my solution has been 4 hours in the stick burner and then move to the pellet grill for the rest of the cook and a good nights sleep.
The last cook I did was a pork shoulder that I started on the stickburner and finished in the instapot -- I scored the pork deep to get enough bark to survive the humidity of the instapot
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.
