There's a manufacturer out of Louisiana that makes a drum in a hexagon shape. Can't find the name, but they are intriguing.

Just to update, I decided to get the PBC. In the end, it all boiled down to capacity, the fact I like to cook hot and fast, reasonable price, rave reviews here on The Pit. I already have a 26 inch kettle with SNS so between that and the PBC, I’ll be equipped to do pretty much everything I need to do. Thanks to everyone for your feedback. Can’t wait to do my first cook! I’m going to go spend some time in the PBC forum.

Congrats! As much as I love smoked/grilled chicken in any of my cookers, the PBC is magical for chicken! Enjoy!

That’s good to know, Huskee. I can’t wait to try Peruvian chicken on it.

Congrats on your purchase, ColonialDawg ! You're going to love that PBC. It's a workhorse and has so many good features. I have yet to have a bad cook on it, and I've done a ton of cooks on that little beast. It's rock solid, IMO.

Added to your 26" Weber+SnS setup, you've got bases covered.

Enjoy those upcoming cooks and let us know how it works out for you.

    Best wishes,
    Kathryn

I don’t have either, but having moved to Dallas where the wind gusts for a while and then dies down I would venture to guess that the tubes will help stabilize temperature when those conditions exist.

I am in Dallas. Almost downtown. Bought a 3 story condo in the market crash for a great deal. My dad is north Garland by Firewheel mall.

Yeah I have a small balcony and my kitchen is on the 2nd floor of the condo. Would be really nice to not have to go up and down the stairs when cooking day to day stuff.

If you're going to go with the 30 gallon size I'd say save some money and go with the PBC. Accessories like the hinged grate make it SO versatile. If you aren't concerned about price, go with the Gateway and get it tricked out with a custom logo.

sort of fell into this thread researching PBC stuff. I own one for our hunting camp and am curious how you like it so far. The PBC is a fantastic/simple cooker.

I love it. Everything I’ve cooked so far is outstanding. Chicken is the best I have ever eaten. The only think I regret buying is the ash catcher plate. I think foil does a better job.

You can get a BBQGuru PartyQ to do the temp control that you need. Works well. I don't take mine down below 250F because it would be more smoldering than burning. The PartyQ holds the temp +-5.

To keep the bottom clean from food and ash, I’ve heard that a cheap pizza pan will fit perfectly on the bottom of PBC.

The PBC is a great choice and coupled with a Weber 26 + SnS you truly do have all of your bases covered. If I had to whittle my arsenal down to 2 cookers it would be those 2.
