After seasoning my new baby earlier today, it was time for that first cook and we went with a family favorite - chicken lollipops. We prepped them 3-4 hours earlier and hit them with Plowboy’s Yardbird. I had a single layer of coals still going in the charcoal basket from seasoning the new cooker earlier. So I used the tool they provide to remove the hot basket and set it on my kettle. It was easy, the notch in the basket handle kept it stable, very cool. I added a full chimneys worth of unlit KBB on top and set it back in the Bronco. Let it go 15 min with the lid off to let it catch, then added the diffuser plate and grate and closed the lid. Airflow controls were both wide open. I used the diffuser because I was using the grate (not hanging, no vertical rotisserie action) and wasn’t counting on any smoke fog from the chicken legs, curious to see how often and when I end up using it in the future. Anyway, let it preheat for 20 min at which point it was 380F, and put them on at 5pm.


At 5:30pm it was humming along at 425F. That’s about as hot as I’d want it, and I was curious about the airflow control impact, so I closed both them a bit to "3" (there are markings on the controls for 1 - 4). It settled down to 375F in about 15 min. Score! Opened it up to check them and they were ready to be sauced.

Another treat - used this! I thought it was outstanding, SWMBO thought it was very good and mentioned it for ham, kiddo ate it but prefers the original. From the jar it’s got a very sweet raspberry punch that mellowed out significantly after it set. It kept the little chipotle sting at the end tho.

Just 10 more min to let it set and they were ready.
