Man, so much wisdom in this thread. I’m new this year to the Bronco. I’ve been having success with using one tumbleweed on the periphery of the charcoal basket and backing off on the air intakes when I’m within 50° of target temperature. I haven’t had trouble overshooting it this way and it doesn’t take that long to get to desired temperature. If I want to cook at higher temperatures, I’ll use one tumbleweed in the center of the basket. Having cooked for several years on a OG Grilla, i’ve gotten used to being able to digitally regulate cooker temperature with some precision. I have felt compelled to try to replicate that with the Bronco. I feel a load off of my mind, reading the comments here about such tight control of cooker temperature not being such a big deal.
Also, I’ve been smoking at 225° for a while and am eager to try it about 50° hotter.
