Fiddling with new bronco. Really like the OKJ skewers. Hang a chicken or pork shoulder directly over coals, no deflector plate. B&B briquettes. Intake +/- 1, exhaust 1.5.
No pix. Have not tried to figure that out. Still a Luddite.
Move your butt to a grate before she gets too tender (5 hours ish). Also keep in mind that with the OKJ skewers your butt is gonna hang low and close to the fire. I just cooked two butts recently hanging on the stock meat hooks. Each butt was doubled up with hooks. As I pulled the first one off the hanger one of the hooks got caught and slipped right through the meat. Could have been in my fire if I waited longer.
The Super Skewers have a 3 prong basket at the bottom, which is a great help in holding meat. I hang a probe down near bottom of meat, which helps with temp control.
