    Third (Or Fourth?) Cook On The Bronco

    Raiding the freezer today to find something to cook along with some Berkshire pork ribs. Well Well Well, What Do We Have Here?

    Its 1/3 of a 10 lb pork loin! Rolled it out and stuffed with some Benton's 20 month aged ham - paper thin sliced. Added some Lumbre Hatch chilies (hot) and some pepperjack cheese.

    Rolled back up and covered with Benton's bacon. I didn't add salt to this loin: Benton's products are popular but are waaaayyyy too salty for me. They even ship at ambient temperature - no cold pack.

    I ordered 4 lbs of bacon, when cooking it for breakfast I soaked it in water for 20 minutes to leach out some salt. Probably won't buy again.

    In the Bronco at 250o with some B&B charcoal and some hickory and applewood chunks. Ribs go on a little later.

      Currently listening to a baseball game on radio, sipping a bourbon, and bathing in pecan smoke from my first Bronco cook.

      How did you hang it? That doesn’t look like the standard hook.

        I'm about to light up a cigar and enjoy this wonderful but windy day. A little bourbon sounds good....

        Windy here in Chicago, too, but otherwise spectacular fall day.

        Cigar sounds good but I don’t want to kill my tastebuds for the ribs.

        And, it might be more than a little bourbon…

      Reds Fan 5 They’re shish kabob skewers from Oklahoma Joe. I’ve got a set also, not just for shish kabobs though, they’re great.

      The ribs, they be on! Also, some good Louisiana Boudin that had a compromised vacuum seal.

      Dry brined with a 50/50 blend of pink Himalayan salt and Red Boat fish salt. Seasoned with Lawry's seasoned pepper.

          Arturo Fuente Hemingway Signature for the smoke - I haven't been able to source these for a few years but found some while returning home from last weeks Texas Meat-Up - I bought a box. Booze is Rumble by Balcones Distilling in Waco, Tx. It is: fermented wildflower honey, turbinado sugar, and Mission figs. So not a bourbon or really any class of whisky. Closest would be a distilled mead or maybe a rum but is all kinds of good. The glass holds about two shots, I had two glasses, then back to beer

          Look on my works, ye mighty, and despair. (I hope you don't know the next verse of that sonnet... )

          Cook finished. Ribs good, slightly dry but not bad. Everything else is great! Served with oven roasted smashed potatoes.

          Pics suck, lighting was bad.
