    Mop/spritz ribs on Bronco?

    First rib cook on Bronco today. Planning to hang without diffuser plate. I never mop, wrap, or spritz ribs on the kettle. Without a water pan in the Bronco should I consider it?

    I think you’ll be fine without any spritzing. I’ve done ribs 3 times so far by hanging in the Bronco, never wrapped, mopped or spritzed. They came out great each time. Trying to spritz or mop while hanging the ribs would be a waste of time IMO. Any liquids would just immediately drip down onto the coals. It also raises the possibility of extinguishing some coals without the diffuser plate in place. Even if you removed the ribs, laid flat on a plate and then spritzed, it’d still just roll off into the coals or onto the diffuser plate as soon as you re-hung them. [assuming you’ll hang them the entire cook] What a hassle. The design of barrel cookers helps keep moisture inside, making a water pan mostly unnecessary….from what I’ve read.

    Just my personal preference here, but I like using the diffuser plate. I feel it does a better job of preventing burnt rib ends that are close to the fire, than without. I use it for every slow cook I do. I feel that it also keeps dripping juices from extinguishing any coals during the cook, making for more steady temps.

      You will find that there will be a lot of moisture in the barrel especially if you are letting the drippings hit the fire. Even still, I usually spitz to keep the bark from drying out. To help control, not burning the rib ends closest to the fire, move the ribs around during the cook. In my experience, the rib-rack hanging under the exhaust gets the most char. What time should I be there?

        I never spritz when I am hanging ribs. Mostly because it is a PITA and I really do not think you need too given that the ribs are pretty much self basting.

            I’ve only hung ribs once in mine, with the diffuser plate. They came out great…
