We had a little gathering at our home and smoked up some Dino ribs on the Bronco Pro. These were a pair of three bone racks of Choice Angus ribs. Used lump with cherry chunks for flavor, went Central Texas on the seasoning...........just salt and pepper. I set the drip pan on the diffuser to catch the renderings (makes clean up much easier and gives me some smoked tallow to use for other cooks). 12 lbs of pre-cook weight fed 6 people with almost no left overs. I guess they were a hit. The bark was to die for. 8 hour cook used a little less than half a basket of lump and chunk. The cook temp was set for around 250 and it held there (+/- 5 degrees) for most of the cook time, which some find difficult with lump, but it can be done if you make sure to settle the lump so there aren't huge gaps between the unlit coals. Folks who've not used the Bronco seem to find it hard to believe how well it controls the cook temp, but for those of us who've worked to learn the cooker it's a dream. The end results are very satisfying.
