    Bronco: First Cook

    First cook on the new Bronco over the weekend. It's been sitting in the shed at our vacation/future-retirement home and hadn't been able to make the time to put it into service. Finally got it done. ​ ​ image widget

                    Whiskeyman53, it was as easy (and cheap) as pointing out to my wife how much space would be opened up in the garage once I sold two other cookers that I would no longer need. I don't know why she cares so much about that, but she does.

                    They came out pretty good, I may have pulled them a tad early, I like them with a little tooth, but it was a bit too much. Flavor was great though.

                      How long did you cook them for? and what temps?

                      Held right about 240 beautifully. 4 1/2 - 5 hours. Had a little crack with the bend test and little resistance to a probe. Wrapped in foil and several bath towels and let them sit about 2 hours. Not terribly underdone, but a little more cooking would have improved them.

                      Nice looking ribs, and I admire your courage. I have yet to trust the hanging of meat over a fire method. I just keep expecting them to end up in the fire. Note to self, trust you must develop..

                        @tsalafuse- Use two hooks per rack. Daisy-chain. Hook one under the second or third rib down and hook the other two to four ribs below that. Then connect the hooks together. Much lees chance of loss.

                      Awesome looking ribs Murdy! The bronco is great at cooking ribs. You can get that look every time, plus precise temp control for a barrel smoker. Can dial it in to 225*if I want.
