MsTwiggy That is the diffuser plate. When using the Bronco as a smoker, it sits on a lip about 6â€-8†above the coals. It’s main purpose is to allow for more even heat distribution inside the barrel. Notice the pattern of holes throughout the diffuser. The other thing it does, which I really like, it allows the dripping juices to sizzle and create that aromatic smoke which is spread throughout the cook, similar to what happens in a PBC.
The PBC does not have a diffuser plate. My personal opinion and findings are that this also reduces the risk of fatty juices extinguishing any coals below your cook….while still allowing the juices to sizzle, as they would when hitting hot coals. Chickens especially, drip a lot of juices.
EDIT: You don’t have to use the diffuser plate when smoking, you can leave it out if you prefer.

Forgot to add, when using the Bronco for grilling, you simply turn the heat diffuser over and place it back on the lip. You then place your charcoal basket on top of the diffuser plate, raising the heat a lot closer to your cooking grate.Last edited by Panhead John; June 3, 2022, 09:31 AM.

The Bronco is a chicken machine... it always turns out a good bird. Whole, spatched, quartered, thighs hung on the kabob hangers... Hell, I just did some pre-seasoned breast filets on the kabob hangers for the wife and they are good.

Yeah, but I never use it. I couldn't really get it to fit together right. Also, I think I lost one of my hanging rods... I'm clearly a mess.

I'm considering getting a Weber 22.5" grate and cutting it to make a half grate for my Bronco Pro for this purpose. Cheaper, and I have to think it would be better put together than the OK Joe's triple grate, which I don't think is even an option in that size.Last edited by Steve R.; June 3, 2022, 02:08 PM.

CAN YOU GRILL ON THE BRONCO? HELL YEAH…..
Last night I did a NY Strip on the Bronco. Reverse seared setting up a 2 zone cook. By turning the heat deflector upside down, you then place the charcoal basket on top of it. This brings the coals close to the cooking grate. Hickory chunks for smoke.

I’ve been doing smoke and sear by converting it up to grill position. At the end of the cook. Made a Tri Tip yesterday.

I think steak done this way is going to be the first cook on the Bronco. Had the chicken I had planned on being first tonight on the OG. After dinner wife was wondering if I could do steak on it. Why yes, I think I can.Last edited by Bogy; June 23, 2022, 02:09 AM.

I've done them on the grill but "cheated" a bit. I've microwaved them for a few min to get them a nice start, then i spray them with olive oil, and sprinkle them with kosher salt. I then wrap them in foil and on the grill they go. I like to put them on the top rack if i can, all the smoke from the dripping fat I swear gives them some extra flavor. My wife loves when I do them like this instead of the oven she tells me they taste better on the grill or smoker
