    I have attended another class - Ribs & Chicken at Mason-Dixon BBQ

    To kick off National BBQ Month I attended the Ribs & Chicken Boot-camp at Mason-Dixon BBQ Services in Greencastle, Pa.

    The class was excellent. Eric, the owner, and the rest of the M-D crew always put on a first class experience. While you aren't prepping the meats you are cooking you are cooking other dishes, starting with breakfast and then the sides that go with lunch.

    Learned how to spatchcock and cook a chicken and how to cut down a rack of spareribs into St. Louis Ribs and how to prep and cook both St. Louis and Babyback Ribs. Each student cooked their own chicken and two racks of ribs.

    If you are able to attend one the Boot-camps I would recommend it...

      I’ve done that class twice. I learned something each time. BKYDBBQ will probably agree, the chicken comes out just as good as the ribs.

          Thanks for posting about the classes by Mason Dixon BBQ. They just dropped off my new Yoder 640S pellet smoker. Eric and his team (Preston and Michael) were very knowledgeable and helpful in terms of helping me select the right product for me. Excited to try it out and will definitely attend a class or two.

            I’m doing my 4th and 5th classes there this July. These are truly unique. They start with community and team building, as the first hour or so is prepping and cooking breakfast items. Then there is prep instruction for the subject: trimming brisket, or prepping ribs, or spatchcocking chicken or turkey. Then while the meat is started over smoke, the teams make lunch items. After lunch, reveal, eat, discuss, and enjoy! Then, team cleanup!

            Worth every dime. You can’t put a price on knowledge.

          I find that chicken is harder to get right than ribs, pulled pork or brisket.
