To kick off National BBQ Month I attended the Ribs & Chicken Boot-camp at Mason-Dixon BBQ Services in Greencastle, Pa.
The class was excellent. Eric, the owner, and the rest of the M-D crew always put on a first class experience. While you aren't prepping the meats you are cooking you are cooking other dishes, starting with breakfast and then the sides that go with lunch.
Learned how to spatchcock and cook a chicken and how to cut down a rack of spareribs into St. Louis Ribs and how to prep and cook both St. Louis and Babyback Ribs. Each student cooked their own chicken and two racks of ribs.
If you are able to attend one the Boot-camps I would recommend it...
