Saturday I attended a sausage making class at Mason Dixon BBQ Services in Greencastle, Pa.
This was an excellent class where they covered various types of sausage, grinding (how to get the fat to meat ratio right), casings, stuffing, smoking, etc. Each participant left with a packet that included everything discussed as well as recipes for numerous sausages. We also got to sample some of the sausages that were discussed and in the packet.
The Apple Pie sausage was really tasty.
I have attended several classes at Mason Dixon BBQ and all have been excellent. Only issue is controlling how much you spend in the shop, one time I left with a GMG Trek and another time I had over 200lbs of charcoal.
