Yesterday I traveled to Grillbillies BBQ Supply in Wendell, NC for a Celebrity 4 Meat Class. They brought in 3 competition cooks to go over how they cook Ribs, Chicken, Pork and Brisket. Brian Corbett with Smokin' Skillies covered Ribs and Chicken. George DeMartz from Twisted Pair BBQ covered his competition Pork. Mat Griner with SouthernQ covered his Brisket process.
They went in depth on their process, seasonings, and timeline for competition. They answered every question asked. At the end of each session we got to eat some of their food. The Ribs and Chicken were my favorites.
I have attended numerous classes there and they have all been excellent. One thing I really like is they have a camera above the demo area that is projected on two screens above the instructor so you can see everything they are doing. Warning if you go there leave your debit and credit cards at home, I spent over $170 on rubs, sauces and a Spitjack injector...
