On September 13th my dad and I visited Grillbillies BBQ Supply in Wendell, NC for their Pork Boot camp. The lead instructor was George DeMartz from Twisted Pair BBQ. We learned about selecting, preparing and cooking a whole hog on a spit, pork belly burnt ends, ribs, chops and other cuts of pork. Some of the cuts that we cooked allowed us to sample both commodity pork and heritage breed pork to compare. This was another excellent class put on by the folks at Grillbillies.
