After all the talk here on our site I picked up the roasting pan just now so I can actually determine if the limit is 400 or 500 degrees. I will report back. 🙂
smokenoob I know the frying pans have the enamel coating but the roasting pan states stainless steel handles so I’m going with Eric’s numbers on this one. I was able a few years ago to buy several Mineral B frying pans that didn’t have the enamel coating on the handles, and have not had an issue using those in an oven. Apparently it’s the enamel coating that causes issues.
de Buyer confirmed that their stainless handles are safe to 500 degrees, but it doesn't state in the descriptions that the roaster or country fry pan can only tolerate 400 degrees for 10 minutes like the epoxy coated handle pans do.
I wrote them back and asked for clarification on the roaster and country fry pan.
Richard Chrz I know you decided on something else, but here is what I got after fussing at them a little bit. They really do need to be more clear on their site about temp limits for their stainless. A blanket, 'high temperature' description doesn't mean a thing. Donw
To clarify:
• The 2-Handle Country Fry Pan has solid stainless steel handles and is oven-safe up to 500°F.
• The 2-Handle Roaster is also manufactured with stainless steel handles (not epoxy-coated) and is likewise oven-safe up to 500°F.
The “oven flash to 400°F” language applies only to pieces with epoxy-coated handles, which is why that limit appears on certain skillets but not on these items.
You’re correct that handle material determines the oven temperature rating, and I appreciate you flagging how this could be clearer on the product pages.
