I've got a set of Wusthof knives. Worth EVERY penny (although mine were a wedding gift). Every time I use one I give it six to eight swipes on the honing steel when I take it out of the block. When I do the dishes, I wash the knives first, individually, by hand. Dry them off. Six to eight more swipes when they go back in the block. Then I do the rest of the dishes. I've never needed to sharpen them after ten years, and I use at least one of them almost every day. They aren't quite as sharp as they were when I first got them. But darn near. I've even brought them over to friends houses to cook with because... well, it's obvious why, isn't it?

Mike, it was all worth…it just last night, made a salad. Cut thru my tomatos like butter! Cucumber, nah….it didn’t stand a chance. All the other veggies screamed in terror!Last edited by Panhead John; February 8, 2022, 02:52 PM.

They’ll let you know when they need to be sharpened. The ones you use least frequently, maybe never. Remember, these knives were made to be used professionally, like 8 hours a day or more. The most I use any knife in a day is maybe what, an hour? Two? And that would be once every couple weeks. I’ll cut up an onion, a carrot or two, a few potatoes… a pro will cut up a few dozen pounds of each, every day.
