Buying My Best..and Last..Knife Set - Help Me Spend My Money Please 🙄

    IMO for the same money you could buy the only 2 knives you would ever need. But I like buying stupid knives, I just buy more at lower prices.

      Make a list of the individual knives you need or want. Learn the brands and series of the top quality knife manufacturers. Get yourself a good sharpening system, and get one you are going to use. Too many good sharpening systems are bought and then sit on the shelf after one or two uses.
      Now go shopping whenever you get a chance at Salvation Army, church and charity thrifts and look over the knife bins. Look for the quality brands and series you researched before. Amazing what good quality knives can be found there for a few buck, just stick to your lists and ignore anything not on it.
      My last score was a chef’s knife with a retail of $180, for $4.00. Take any finds home and sharpen. You can build a pretty impressive collection for a fraction of a fixed set.

        Victorinox . . . High quality, modest price. They just work.
        I mostly use a chef, boning, paring, and slicer knives. Chef knife 95% of the time.

          One other piece of advice. Get a good cutting board if you don’t already have one. NOT plastic or bamboo. Both are too hard, whether we are talking German or Japanese knives. Maple and Walnut are best, but you have to wash them thoroughly after cutting meat on them. A good cutting board is as important as your knives. :-)

          I agree with most everyone that buying a set isn’t as good as buying individual knives, but if you really want set, go for it. I bought individual knives and the block so I made my own set. As for what knives, I really love my Shun Classics. Initially I resisted the D handle but once I tried them I fell in love. I use the Nakiri most often, followed by the chefs knife, slicer, paring and boning knife. I bought their cleaver which I never use. I also have a Wusthof scissors. Have Shun bamboo block they all go in along with my ceramic honing rod. They go for years without needing sharpening as long as I hone them regularly.

            With these you get to build your own set that has exactly what you want. Of course you will need a decent Chefs knife, so start with this one, and build you set from there. No need to thank me.

            Here is my Cutco set. I love these knives. There are about 3 or 4 knives I don’t really use. The other 13 to 14 are used on a regular basis. The block also holds two forks and the best kitchen shears ever made. It also holds 12 of their table knives. (4 were dirty when this picture was taken).

            I’ve had this set for 30 years. I might be a bit biased because they are made in the city I grew up in and I worked there for two summers while I was in college.
            All of their knives are American made. They will sharpen them for free whenever you want (You just need to ship them to the factory and pay for return shipping).

            Here are 5 knives for my set that might not be in a lot of other knife sets.

            The cleaver at the top will easily cut through beef and pork bones

            The next knife down they call a butchers knife, I love using it to disassemble chickens.

            Next is the Spatula Spreader. It’s a sandwich makers dream knife.

            The boning knife is flexible and razor sharp.

            The bottom knife is one of their serrated knives. Their serrated knives are different than any other serrated knife I’ve ever seen. They call it a Double D Edge. I believe they slice more than they tear.

            In the block is also two chef knives (9” and 7”), a couple pairing knives, a couple of carving knives, some slicing knives, a trimmer, and three other knives I don’t use too much.


            Are these knives expensive. Yes! Would I own them if I didn’t work there, I’m not sure. I would never give up these knives for another set. I’ll own and use these knives until the day I die.

            This is a great thread. I use Old Hickory knives. Surely not what one would consider a high end knife. Love the patina and the handles and they hold an edge great. I do not think this brand is what you are looking for, but it works for me. If I were to purchase a set, I would go with Mercer. Not a real expensive knife but excellent quality. I also own their Hells Handle spatulas and they are my favorite cooking tools. For me, I am going to continue purchasing Old Hickory with one exception and that is the 7" Nakiri Knife from Sam the Cooking Guy as others have suggested. Dont think I have helped.

              I think Mercer might make Sam’s knives. I have a few Mercers (including their Nakiri) and really like them. However, coming from cheap sets, anything that actually gets sharp and holds an edge for months is just amazing.

            WHAT THE HELL IS WRONG WITH YOU PEOPLE!!??

            Almost all of you are trying to talk me out of this. What happened to the common spirit of "Hell yeah you should get that, and actually consider upgrading to the XYZ model" Who are you people? This is unbelievable! Here I am trying to drop a boat load of money on a knife set, and y’all have the unmitigated gall to try and give me cheaper alternatives or even talk me out of it! WTF?!! Alls I know is, my brothers over at BBQ Brethren are laughing their ass off right now. Y’all are embarrassing me.

            Like many others I would argue for buying different knives from different manufacturers to fit your needs. I have Wustoff, Shun, Henkels, and Sabatier. Also have a couple of hand made Japanese knives that I purchased through this site: https://knifewear.com.

            Also agree that getting a good set of sharpening stones important too. I also like the idea of buying a nice set of steak knives.

              My head really is spinning from all these suggestions. I’m gonna take the rest of the night off and continue tomorrow. Trust me, I ain’t dropping this kind of money without doing my research. Thanks everyone……ALSO, I have a good sharpener already, the E-5 from Work Sharp.

                If you have the E5 as your sharpener, you will be best served with knives where the bolster does not extend fully down to the heel. This will let you sharpen the full length of the blade. Here's a handy pic of what that all means.

                You need several sets of stones, both man made and synthetics. That way you can really dial that edge in for the product you're cutting.

                Oh, and don't forget a sharpening pond, a diamond lapping plate and a ceramic hone for touching up the edge of your knives between sharpening sessions 🤣😎
