    Knife Porn

    SheilaAnn recently posted her "go to" knives on another thread. And they were purty. So, I figured we should post some purty knives ….

    here goes

    First, these are my daily go to knives …. Wusthof Classic Ikon: 8” Chef, 7” Santoku, 6.5” utility, 4” utility … and that fork is awesome, too. You cannot go wrong with the Wusthof Classic Ikon knives

    Second, when I need some serious chopping, these Kamikoto Kuro knives are amazing … 7” Santoku, 6.5” Nakiri, 5” Utility. These are an incredible step up from any other knives that I have owned.

      My routine knives are Wusthof Classics, the thinner granton carver being a nice piece especially.

      Decided to clear off kitchen counters. Evaluated which knives are used most frequently. They got a place on the magnet. I’ve been very happy with this change.

        Thanks! The knives on it have changed. Got 2 brisket knives up next to the tile wall now.

      Mine don't match, but I've been finding the value of at least getting into mediocre knives the past 3-4 years. I've also been watching too much Sam the Cooking Guy lately, so the Nakiri is new, but I couldn't drop 2x the price for his mug on the side of it. However, I'm seeing why he always grabs that knife first, I really like the feel of it or maybe I just like that it's brand new and still crazy sharp (I'm due for another round of sharpening on several knives again).

      They match and succeed top-of-the-line, higher-priced cutlery.

      We have a bunch of knives, but these are the ones I use. My wife is scared of them because they are too sharp...

      The gyuto is a san mai construction with stainless on the sides and R2 powdered steel in the middle. It has a ho handle, (western handle).The R2 steel takes a great edge and holds it well.

      The petty, (smaller knife), is also a san mai construction, but has carbon steel on the outside with a layer of very thin nickel, and the center is 125sc carbon steel. I sent the handle material to the maker in Sweden. It's from a piece of cherry a cousin gave me 40 years ago. I have another piece of that wood that I am going to use to make a knife for that cousin - some day...

      The tomatoes somehow turnded into pico de gallo...

        You know, the reason the tomatoes turned into pico is because the knives were too sharp. Shame on you for keeping sharp knives! Don't ever do this again!
