Infrared thermometer: Really "just optional"?

      Just hopping on here. This thread tells me that pretty much everyone who uses an infrared thermometer uses it to check cooking surface temperature. Is it it not accurate enough to check the temperature of foods? Am I understanding that correctly?

        it would display the temperature of the outside of the food (I believe) not the internal temperature which is what you need to know.
