    Grill grates and smoke

Do the GrillGrates really let you get some smoky flavor from a gas grill if you put pellets in the troughs? Sounds too good to be true. I loves me some smoky food.

Never tried that, use a smoke box set on flavorizer bars. Haven't done that in a while. Use Kettle when smoking. I'm sure it would add smoke flavor. Failed to mention, wood chips not pellets.

It seems to me that this would work fine, actually. You could probably also do it with wood chips

Yes. I do this fairly often with grill grates on my weber summit. It isn't overwhelmingly smoky, just a nice hint. Particularly good when finishing meat started in sous vide.
