Quarterly Visit From Meathead - What Questions Do You Have??

For instance to test out a Sous-vide-q or Q-V-Q recipient there are lots of time/ temp combinations at each stage, some of which take hours to days. Then there’s when you apply rub etc. These are variables that a single person with a single setup can’t test all the combinations. How do we optimize for best results as a team effort? Maybe be you can test this stuff in a serious eats commercial test kitchen but still is no small effort. If we don’t test, we run the risk of accepting a less than optimal result as truth (your "husband’s tales")
