      How about pastrami? The fact that I’ve got 11 lbs of brisket in the fridge curing which should be ready tonight, really has no influence on my suggestion. It still needs to be desalinated and seasoned and then wait a couple days before smoking. But how about it? `

          I have did pulled pork twice since the 29th of June. That's what everybody wants for there birthday dinner. And my grandma's german chocale cake from scratch. My husband does not bbq or cook. He can make scramble eggs.

              Oops! Now I did too. And I'll vote for "porkstrami". Boston butt, cured and processed/smoked as pastrami.

                Draznnl its really good - especially when brisket is so expensive. It's great sliced or pulled. I just follow the same "Katz" deli recipe on the free side, brining/curing the butt, then doing the dry rub overnight in the fridge before smoking.

                  My mother's version of the red checkered cookbook (Better Homes & Gardens I think) has recipes for quail, dove, raccoon, possum, squirrel, and I think even rodents in it. Apparently they were still a lot of folks cooking those items back in the 50's! The copy my wife got in the 90's as a wedding gift foes not include the unusual meat recipes...
